This Honey Granola recipe was submitted by AABA member (and Past President) Lindsay Barranco. It originally appeared in our January 2015 Newsletter.

Ingredients

  • 1 (18 ounce) container of old fashioned
  • oats (6 cups)
  • 8 ounces sliced almonds
  • 1 cup dried apricots, chopped
  • 1 cup dried cranberries, chopped
  • 1 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 ½ sticks of unsalted butter
  • ½ cup honey

Technique

Preheat oven to 350 degrees F.

In a large bowl, mix together the dried fruits, oats, almonds, brown sugar, cinnamon, and salt.

Melt the butter in a small saucepan over medium heat, then stir in the honey.

Pour the honey/butter over the oat mixture and toss to distribute it over the ingredients.

Spread the granola onto a parchment-lined baking pan (preferably with sides to hold the mixture in) and bake until the oats are toasted and the sugar begins to caramelize. You will need to stir the oat mixture several times during baking to get it to cook evenly.

Bake for 35-40 minutes.

Cool the granola completely in the pan and transfer it to an airtight container for storage.
